If you think you have eaten most of typical Japanese foods, I suggest that next thing you should try is to eat the Okinawa foods.
Okinawa is the most southern prefecture of Japan. If you get a chance it is a worth visiting. I love it, but as it is in the most southern and very far away from Tokyo I go to Okinawa restaurant.
The foods are so much different from typical Japanese foods like Sushi, but I promise they are delicious.
Especially Umibudo-sea grape-is one of my favourite.
It is very hard to discribe the mouthfeel. I think it is a little bit like caviar(e), but it has more popping texture and also sticky, thickened texture.
How to eat...
Put a bit of Ponzu sauce(soy sauce with citrus juice.) on Umibudo and you eat.
You will be too surprised how delicious it is and to lose words.
